Island Burgers
1 / 2 cup honey
1 / 4 teaspoon paprika
1 / 4 teaspoon curry powder
1 / 8 teaspoon ground ginger
4.1 teaspoon ground cinnamon 2 pounds
lean ground beef
1 / 4 cup soy sauce 1 can
(23 ounces) pineapple slices, drained
rolls 8 Hambug or sandwich buns, split, butter and toast
lettuce leaves, optional

In a large bowl, combine honey, paprika, curry, ginger, and cinnamon. Add ground beef mixture and mix well. Shape into 8 equal patties. Grill burgers over medium heat 3 to 4 minutes per side. Brush with soy sauce and grill another 5 or 6 minutes until juices run clear or hamburgers are made to your specifications. Suffice it and turn a couple of times in this kitchen. Just before the burgers are done, grill the pineapple slices until browned, turning once to brown both sides. To serve, place burgers and slices roasted pineapple on buns or rolls and add a lettuce leaf, if desired. PENNE PASTA CASSEROLE
1 pound lean ground meat (beef or turkey)

large onion, chopped 1 can (14 1/2-oz) diced tomatoes with Italian seasonings
1 can (6 ounces) tomato paste
1 / 2 cup water
3 1 / 2 cups uncooked penne pasta
3 cups mozzarella cheese, divided Prepare pasta according to raw package directions. Preheat the oven to 350 degrees. While the pasta is cooking, brown meat and onion in large skillet until meat is no longer pink and drain excess fat. Return meat and onion to the pan and add the tomatoes, tomato paste and water. Season with salt and pepper to taste. Add a little garlic powder, if desired. Cook until hot.

Spray 9 x 13 inch baking pan with cooking spray.

Combine the cooked, drained pasta with meat mixture. Add 2 cups of mozzarella cheese. Pour into sprayed baking dish. Spread the cup remaining cheese evenly over top of casserole.

Bake uncovered for 20 to 35 minutes or until bubbly and cheese is melted.

Yield: 6 8 servings
